Eating Healthy – it’s easier than you think!

When I was growing up in the 1950’s, our family (mom, dad and 3 girls) were healthy (no cavities at all and no serious illnesses that I can recall) and in looking back, it was simple. My father did not allow candy (sugar) or sodas in the house. We ate simple Italian food – lots of olive oil, garlic, onions, herbs, potatoes, beans, greens, vegetables, salads, and some meat, always home-made Italian sauce and meatballs on Sundays-YUM! Mom made home-made pasta and hung it on linen towels to dry on the kitchen ladder back chairs, and my father made delicious home-made bread. ( We cannot believe we did not learn to make it.) Manja!!!! (Let’s eat – in Italian, of course!)

There was not much processed food (boxed or packaged). Simple. R e a l. f o o d – with quality nutrients (our Creator’s design to keep us alive and well). While I am definitely not a chef, I have accumulated lots of delicious recipes (I can follow instructions!) and below are some of my favorites:

TIP: In looking at recipes, it they a lot of “unhealthy ingredients”, i.e., sugar or flour, etc., I don’t consider making the recipe.

TIP: I’ve included vegetarian options in most recipes.
